Cava, the Spanish equivalent of champagne, is a wonderfully crispy, dry and yeast sparkling wine. Once matured, the wine ferments another five months in American oak barrels followed by a year in French oak. Only then do the acetic notes become more pronounced and begin to harmonize gently with the fruity aromas of vintage Cava. Cava vinegar is an ideal companion for vegetables, fish, quality meat and to season any Mediterranean dish. Some drops improve ripe cheeses and accentuate the sweetness of ice cream.
