Designed with the Schutzenbach method of 1823 to convert wines into high quality vinegars, Unio has produced a sweet and sour vinegar made with Riesling produced in Lonsheim, Germany. This vinegar is elegantly sublime and fruity, with a fine acidity and a silky body with a fresh flavor. Aged for six months in a French oak barrel, this vinegar brings the flavor of lemons, peaches, rosemary honey and acacia flower to any food on which it is sprinkled. It is delicious in vinaigrettes, mixed with cold white gazpacho or mixed with sweet marjoram and olive oil to create a delicious sauce for rabbit or chicken.
