Where there is good wine, there is good vinegar. Castello di Volpaia has been making some of the best Chianti that can be found for many generations. Its aged red wine vinegar is produced using the traditional "truciolo" method, one used for the first time during the Middle Ages. Percolated through oak and chestnut wood flakes, this method converts the wine's natural alcohol into the acetic acid of the vinegar without sacrificing the original quality of the wine.
